Thai Style Stir Fried Chicken with Cashew

Chicken and cashew is an all time favourite for many people … now add a little bit more spice, and it becomes an ultimate delight!  Known as Kai Pad Med Ma Muang Him Ma Phan in Thai!

Preparation Time:  20 minutes

Serving:  1

Ingredients for 1 Serving:

  • 50 g chicken breast
  • 2 tbsp roasted cashew nuts
  • 2 dried chilli with seeds in
  • 1/2 tbsp minced garlic
  • 1/2 onion, cut into 1 inch pieces
  • 2 tbsp wood ear straw mushrooms
  • 2 stalks spring onion, cut into 1 inch long pieces
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1 tbsp oyster sauce
  • 1 tbsp oil

Method:

  1. Heat the oil in a wok and then add mince garlic and chicken
  2. Add onion, wood ear mushroom and big red dried chilli, and stir together well
  3. Season with sugar, fish sauce, oyster sauce and mix thoroughly
  4. Turn burner off and then add spring onion and roasted cashew nuts, mix well together
  5. Serve with hot jasmine rice
